ITALIAN RICE
Round grain rice
Round grain rice is an Italian excellence, its grains are small and rounded and its length never exceeds 5,2 mm. The types of round grain rice can serve different uses: puffing, pudding, milling and sushi, such as the Selenio rice.
The length of medium grain rice is between 5,2 mm and 6 mm and its grains are about two to three times longer than they are wide. Its use depends on the different types of medium grain rice: Vialone Nano rice is used for the preparation of risotto, while Lido rice for ethnic dishes or sushi.
The world of long A grain rice is vast and varied, it includes different types and with different uses. Its grains are longer than 6 mm and are about two to three times longer than they are wide. The different types of long A grain rice are used for parboiling, for industrial use and for the preparation of risotto in HORECA business.
The most cultivated rice type in Italy is the Long B grain rice. Its grains are long (6 mm or more) and thin and four to five times as long as they are wide. The main use of long B grain rice is for ethnic dishes but can serve also for rice flour milling. The aromatic rice type has a natural fragrance as some Eastern types of rice.
The Indica rice is the most cultivated rice in the world, its grains are longer than 6,2 mm and four to five times as long as they are wide. Its different types can be the aromatic one, as Basmati and Jasmine rice, or one of the Spanish excellence, the Puntal rice.

Characteristics
Rice husk
Rice husks, also called rice hulls, are the protective coverings, formed from hard materials, including silica and lignin, of rice grains which are separated from the grains during milling process. In the course of a typical milling process, the husks are removed from the raw grain to reveal whole brown rice.
Rice bran
Rice bran is produced during the second stage in milling, the whitening or polishing process, when the bran layer is removed from the brown rice kernel. Rice bran has a high nutritive value and contains 10-23% bran oil.
Broken rice
Broken rice consists in grains broken in the milling process. Rice broken kernels are 25% or less of the original length of the grain and represent 2-3% of processed rice production.

Puffed rice
Puffed rice is usually made by heating rice kernels under high pressure in the presence of steam, commonly used in breakfast cereal or snack foods.
Rice bran oil
Rice bran oil is the oil extracted from the hard outer brown layer of rice.
Rice flour
Rice flour is a form of flour made from finely milled rice, may be made from either white rice or brown rice. Rice flour is a common substitute for wheat flour.
